Everyone needs a good salsa ready to go in the fridge. The shelf life might be shorter than store bought, but thats never an issue because this will be eaten up quick!
You can use what ever tomatoes you like best, but I have found that Red Tomatoes work and taste best for this.
To cook, it is up to you if you want to use a grill, cast iron skillet, or regular stove top pan. I like the girl best because it gives it the best smoky flavor. If you use a cast iron or pan I found it works best on high heat and if you keep a lid covering the veggies while cooking.
When adding the veggies to the blender, it is up to you if you want to leave the seeds in or out of the jalapeno for more or less heat. Feel free to also add more salt or sugar if needed!
We use this salsa for taco night, breakfast tacos and burritos, and of course chip dipping! It will last about a week in the fridge because the lime juice is a natural preservative.
